Herbalicious definition, or whatever Fergie said. These herb seasoned cod tacos make for a delightfully bright summer dinner. I felt like I was biting into little clouds laced with cilantro-y, dill-y, basil-y flavor. Add your favorite toppings and prepare to have your tastebuds thanking you!
Ingredients
12oz cod or other white fish
2-4 tbsp fresh herb blend (dill, basil, chives, parsley, cilantro)
2 tbsp fresh lime or lemon juice
1 tbsp olive oil
Salt to taste
Pepper to taste
4 corn flour tortillas
Toppings of choice
Sour cream
Iceberg lettuce
Cilantro
White onion, thinly sliced
Instructions
Step 1
Prepare fish by patting dry and cutting into bite sized pieces. Add to a medium bowl with herb blend, fresh lime or lemon juice, olive oil, salt, and pepper. Let marinate for about 10 minutes.
Step 2
While fish is marinating, heat a pan to medium high heat. Once warmed, heat tortillas for roughly 30 seconds each side, or until tortillas start to slightly darken.
Step 3
Set tortillas side and add olive oil to the same pan. Add white fish, cooking on each side about 2-3 minutes or until entirely cooked through.
Step 4
Once fish is fully cooked, begin to prepare tacos. I like to add 1-2 tbsp sour cream to the tortilla, then add my fish. Topping with lettuce and white onions, with a squeeze of fresh lime juice and sprinkled cilantro on top.
