Lasagna turkey chili

Ingredients

Chili

16oz ground turkey

1 tbps olive oil

2 tbsp garlic powder

2 tbsp paprika

1-2 tsp chipotle powder

1 tbsp cumin

1 tsp ground mustard, optional

1 tsp chili powder

2 medium carrots, chopped

2 stalks celery, chopped

1 medium white onion, chopped

16oz can crushed tomatoes

4 cups chicken bone broth, low sodium

15oz can black beans, do not drain

2 sheets lasagna noodles, broken apart

Salt and pepper to taste


Toppings

Sour cream

Green onions or cilantro

Shredded cheese

Chili flakes

Round, bite-sized tortilla chips

Instructions

Step 1


Heat a large pot on medium heat, adding 1 tbsp olive olive once warmed. Add ground turkey, garlic powder, chipotle powder, cumin, ground mustard, chili powder, and a sprinle of salt and pepper. Cook until browned, stirring and mixing occassionally, about 7-10 minutes.


Step 2


Remove cooked turkey from pot, setting aside. Leave oil and turkey juices in pot. Add chopped vegetables: carrots, celery, and white onion. Cook until softened and onions are almost transulscent. Roughly 5-10 minutes, stirring occassionally.


Step 3


Once cooked, add ground turkey back to pot. Add in remaining ingredients: crushed tomatoes, chicken bone broth, black beans, and broken lasagna noodles.


Step 4


Begin to bring the mixture to a light boil, adding in your lasagna noodles. Continue boiling until lasagna noodles are softened, about 5-10 minutes.


Step 5


Reduce heat to low and simmer for 15-30 minutes. The longer the mixture simmers, the more time the flavors will have to marry together!


Step 6


Taste your creation, making sure not to burn your tongue! Add salt and pepper as needed. Once satisfied, ladel into bowls and add your favorite toppings. Enjoy with your favorite people on a crisp day, or keep it all to yourself.
