On the go chicken snack wraps two ways

About the Recipe

Recipe makes 2 snack wraps each. Double or triple recipe as needed! And, I promise, the fresh herbs are 100% necessary.

Ingredients

Buffalo chicken wraps

6 oz boneless, skinless chicken breast, shredded

2 slices provolone cheese

1/2 cup buffalo sauce of your choice

1/2 cup light mayo

1/4 cup celery, sliced and diced

2-3 tosp red onion, diced

Salt and pepper to taste

Optional: Lime juice


BBQ wraps

6 oz boneless, skinless chicken breast, shredded

2 slices provolone cheese

5-6 oz BBQ sauce of your choice

1-2 tosp light mayo

1/4 cup celery, sliced and diced

2-3 tbsp red onion, diced

Salt and pepper to taste

Optional: Lime juice

Instructions

Step 1


Prepare vegetables and herbs by thinly slicing cucumbers and celery, then chopping and dicing cllantro, green onions, and red onions. Optional: Soak red onions in water for 10 minutes to reduce harshness of flavor.


Step 2


Cook chicken breasts and shred, either by pulling apart with two forks or placing in a bowl and shredding with a hand mixer.


Step 3


Combine sauce ingredients (buffalo or BBQ with mayonnaise, salt, pepper and optionally lime juice).


Step 4


Place tortilla wrap on aluminum foil, add two sliced of provolone cheese. Top with 2-3 ounces of chicken and sauce mixture.


Step 5


Add celery for buffalo or cucumbers for BBQ. Optional: Top with red onions.
