About the Recipe

Corporate girlies and guys unite! This recipe is quick and easy to make the night before work, and is perfect for eating at your desk if you need to work through the lunch hour. No microwaves or weird smells will make your coworkers very appreciative as well.

Ingredients

Pasta salad

1 cup chickpea pasta, I used Simply Nature

8 oz boneless, skinless chicken breast, cooked and cubed

1 large honeycrisp apple, cubed

1/2 lemon, juiced

1/2 medium red onion

1/2 long English seedless cucumber

1-2 oz feta cheese, crumbled

1/4 cup green onions


Dressing

2 tbsp champange vinegar

2 tbsp sunflower oil, or olive oil

Salt and pepper to taste

Optional: 1/2-1 tbsp honey

Instructions

Step 1


Roughly chop your vegetables and chicken into 1 inch cubes. Finely chop the green onions. Add to a medium sized bowl. Make sure to toss in lemon juice right away to avoid the apples browning!


Optional: If you find the taste of raw red onions too harsh, try soaking in a bowl of cold or room temperature water for about 10 minutes. Dry off with a paper towel, then add to your bowl.


Step 2


Add your champagne vinegar, oil of choice, salt, and pepper. Mix until everything is completely coated.


Step 3


Top with crumbled feta and eat right away or portion out your serving for tomorrow's lunch! I make sure to make a little container of extra dressing on the side just in case I need it.
