Vanilla and cinnamon spiced granola

About the Recipe

Spice up your breakfast and snack time with a hint of vanilla, a dash of cinnamon, and a filling crunch!

Ingredients

1/2 cup rolled oats

1/4 cup cashews, whole or halved

1/4 cup almonds

1/4 cup walnuts, whole or roughly chopped

1/4 cup Brazil nuts, whole or roughly chopped

1/4 cup macadamia nuts, whole or halved

1/3 cup honey

1/3 cup maple syrup

2 tbsp vanilla

1/4 tbsp cinnamon

1/2 tsp nutmeg

1/4-1/2 tsp salt, more to taste

Instructions

Step 1

Preheat oven to 350°. Add rolled oats and nuts to a medium mixing bowl.

*If you’re struggling with whether or not to go out of your way to purchase Brazil nuts or to just swap them for something else, just know they are as necessary and delicious as they are expensive.

Step 2

For best results, heat honey, maple syrup, cinnamon, nutmeg, and salt in a medium pot on the stove until well combined. If in a pinch, add these ingredients directly to your mixing bowl.

Step 3

Stir all ingredients until thoroughly incorporated.

Step 4

Place parchment paper on a baking sheet and bake in oven for 10-15 minutes. Watching mixture until lightly browned.

Step 5

Allow granola to fully cool. Break up by hand, or add to a large sealable bag and break up with a wooden spoon or rolling pin. Enjoy with oatmeal, yogurt, or as its own snack!
